I had a similar table when living there in the 70's
Cookbook recipes usually use words like “impurities” and “scum” to name the foamy residue that rises to the surface of a bubbling stock. But what does that mean? For starters, the “scum” and “impurities” aren’t harmful, or even likely to impart an undesirable flavor. They are merely mostly runoff proteins-a mixture of myoglobin and marrow fat that coagulates when the liquid is heated. Chicken myoglobin is considered healthy to eat; it's a naturally occurring protein in chicken muscle that stores oxygen and gives dark meat its color, and is a good source of dietary iron when consumed as part of a balanced diet.

Mom and Dad would have some really interesting stories about the Orang Laut. Apparently, they had some really dark but profitable "businesses" going on; piracy would be tame in comparison. Wonder if your parents have some academic literature on it.

Nice to see U back! Thanks for sharing Thunder Tea Rice. I do cook this occasionally for family. My version is without the herbs, cant take the strong taste. I don't use long beans, chai poh but French beans and Sichuan veg instead as they taste better and u get more kicks with the Sichuan veg.
